Slow Cooker Curry Chicken

I WAS going to do a modified recipe for cheese and broccoli drumsticks, since I don't eat drumsticks, using a cream of broccoli and cheddar cheese soup. However, when Mom picked up the can, someone had put Cream of Celery in the wrong spot, so we have a can of that.

We also had a couple jars of curry sauces, store/home brand, since it's cheaper and just as good. I had requested those curries, since it's pretty simple and foolproof to do.

Recipe
In the slow cooker, I tossed in the can of Cream of Celery soup, a jar of Thai Green Curry sauce, sprinkled with some sweetened coconut, rosemary and a teaspoon of maple syrup.
Played with the settings so that it would be done at 5:30 (when Dad gets home) and set the heat on low.

It was soooooooo good! I should have put in more chicken breasts so that we could have leftovers. Like, a total of six chicken breasts would fit in that slow cooker. It was a tad spicy, but I think it would work with a milder curry sauce.

yuuuuuuuuum, I wanna make it again!

  1. When I went to see "Adam" the other night, I didn't have time to make anything, and saw the movie on a hungry stomach. Stopped at a Chinese restaurant, and got a take-home Sesame Chicken. There was a lot of it, some broccoli, and a half-pint of rice.

    That lasted 3 meals already, and I Still have enough chicken for the entree tonight. It was only $8.99 US, so I think I'm going to be doing a Lot less cooking, and might even save some money.

    I've never had curry, but your recipe sounds good.

  2. mmmmm, Sesame Chicken sounds good.... I should try and look up the recipe sometime, since I don't know whether I'll get to the local Chinese restaurant any time soon.
    But yeah, Chinese food tends to last a while. At university, my personal favorite was Chicken Chop Suey. The owner of the nearest Chinese restaurant knew my order perfectly within a year: Chicken Chop Suey without mushrooms dinner special, with spring roll and sweet corn soup.
    He also knew my roommates too. Once, I was too busy working on an essay to go out and eat, and my roomie just got back from the restaurant, so I sent her back with a $20 for an order of Chicken Chop Suey and an order of rice; she came back with my usual order. Apparently the owner knew who it was for.

    Aaaah, I miss that restaurant. But yes, it was delicious. I now really love the slow cooker.
